Stephen Durfee, chef-instructor of baking and pastry arts at the Greystone (Napa Valley) campus of The Culinary Institute of America, one of the country’s most respected cooking schools. He previously served as pastry chef at the famed French Laundry in Yountville, California, and was named Pastry Chef of the Year by the James Beard Foundation in 1998.
